Santa was too busy, Rudolph was too tired, and Frosty…well, Frosty was too melted to attend this month’s Holiday Cocktail Rum Club event at La Isla Cuisine. However, those of you that attended can rest assured that you are on Santa’s “Nice” list and won’t be getting a visit from Krampus; the anti-Santa.

Holiday cocktails were the theme, and I think everyone was quite pleased with the drinks we passed out. Here are the drinks we tried (with the recipe) and the small plates that accompanied each…

Cranberry & Ginger Mule

I think this was by far the most popular and was matched with a Winter Ahi Tuna Poki that was served on a crostini.

Combine in a pot: 4 Cups Cranberry Juice, 1/2 Cup Fresh Ginger- peeled and smashed, 1/2 Cup of Honey, and bring to a boil. Mix with Spiced Rum and Ginger Beer. Experiment with ratio of Mule Base, rum and Ginger Beer. Garnish with Orange Peel or Frosted Fresh Cranberries.


Karen Johnson’s Kirk & Sweeney 18 Manhattan

Karen outdid herself with her take on a traditional Manhattan and Rodel Borromeo paired Karen’s Manhattan with marinated short ribs and sauteed jumbo prawns.

2oz Kirk & Sweeney 18 year rum, .75oz Antica sweet vermouth, 2 dashes of Angostura bitters, and 1 dash of orange bitters.


Hot Buttered Rum

Our final pairing was a hot buttered rum that was served with spiced pear cake and vanilla ice cream

Half a pound of butter, 2 cups brown sugar, 1 tbl spoon ground cinnamon, 1 tbl spoon whole cloves, 1 tsp ground nutmeg, 1 tsp cayenne pepper, and 1 tsp salt. Add hot water and rum to liking.



To cap the evening off, a rich snifter of Coquito was served as our after dinner cocktail. This is a secret recipe :)
